food reflects who we are, shapes the way we live and the impact we make. that’s why every dish on our menu is carefully considered before it reaches the bench 

we embed carbon and ingredient decisions into our menu development process, using creative thinking and menu planning to help lower carbon while serving dishes that look great, taste amazing, and are a little lighter on the planet

whether you're craving something familiar or trying something new, eating meat or choosing plant-based, everyone deserves a meal they'll enjoy. that's why thoughtful choice matters - creating menus with something for more people, without compromise 

when we create a dish, flavour comes first. then we look at balance, ingredients, allergens and dietary requirements 

for our vegan dishes we seek approval from the Vegan Society, so guests can feel confident in what they’re ordering. for our gluten-free choices we run additional tests to make sure that these are below 20 parts per million of gluten, so that people with gluten allergies feel safe and excited to eat their order 

all of this work is so the food our guests choose feels welcoming and judgement free. so no matter who you are and how you eat, you can come as you are, eat how you want, and leave feeling nourished

some days call for something light. others call for something warming, filling and full of comfort. good food makes room for both  

health, for us, is about balance. not taking the joy out of eating, but making sure flavour, freshness and nutrition work together from the start 

today, more than 70% of the dishes on our menu qualify as healthier options under UK HFSS guidelines, which look at levels of fat, sugar and salt. the aim is simple: to create food that tastes good, and helps you feel good too

plant-rich food full of flavour 

food is about flavour rather than rules 

we all remember being told to eat our greens. maybe you loved them. maybe broccoli made you wrinkle your nose. either way, the message must have stuck  

because now more of us are looking for easy ways to eat more plants that taste great, bring colour and variety to our plates, and can be a nourishing part of a balanced diet

that’s why we’re making plant-rich choices easier to enjoy, whatever your dietary needs 

by plant-rich, we mean dishes made with at least 70% plant-based ingredients. they might still include meat, fish, eggs or dairy, because there’s a plant-rich option for everyone. it’s just about adding more veggies, pulses and tasty herbs to our bowls 

today, over 50% of our menu is plant-rich. that includes our vegetarian and vegan dishes too, which are as generous, satisfying and as packed with flavour as everything else on the menu

lighter on the planet 

what we put on the menu makes a real difference to our overall carbon emissions. thinking carefully about menu composition and ingredients is one of the most powerful ways to reduce our impact 

plant-rich dishes can help lower our carbon impact, especially when they include lots of veg and greens, and where they can, a little less meat and dairy 

behind the scenes, we work with klimato - a food carbon data specialist - and our suppliers to understand the impact of our ingredients. this helps us keep carbon reduction part of the conversation when we’re creating dishes, alongside those all important factors of taste, freshness, nutrition, allergens and dietary needs.

because lower-impact food should still be food people genuinely love to eat 

for me, the exciting part is that carbon is now part of the conversation from the start. klimato gives us the insight to make better ingredient choices but the goal stays the same: bold fresh food that people genuinely want to eat
